Tired of the usual mashed potatoes?  Try this purée that combines sweet potatoes and parsnips seasoned with butter, brown sugar and chives. It's simply delicious and ready to serve in 30 minutes!

    large sweet potato, peeled and cut into 1/2-inch pieces (about 3 cups)

    medium parsnip, peeled and cut into 1/4-inch slices (about 2 cups)

  • 1/4

    cup Swanson® Chicken Broth or Swanson® Organic Chicken Broth or Swanson® Natural Goodness® Chicken Broth

  • 2

    tablespoons butter, softened

  • 2

    tablespoons packed brown sugar

  • 1

    tablespoon chopped fresh chives

How to Make It

Step 1

Place the potatoes and parsnips in a 4-quart saucepan. Add water to cover. Heat over medium-high heat to a boil. Reduce the heat to low. Cover and cook for 10 minutes or until the vegetables are tender. Drain the vegetables well in a colander.

Step 2

Place the vegetables, broth and butter into a food processor.  Cover and process until the mixture is smooth. Add the brown sugar and chives. Cover and process until the mixture is just combined. Season to taste. Sprinkle with additional chopped chives, if desired.

  • Recipe Note: For even more flavor, cook the sweet potatoes and parsnips in Swanson® Chicken Broth instead of water!

    I love sweet potatoes and parsnips so naturally I tried this recipe. It was easy and delicious. It would be a new twist and a great addition to holiday meals!!
