How to Make It

Step 1

Heat the beans, salsa and rice in a 2-quart saucepan over medium heat until the mixture is hot and bubbling, stirring occasionally.

    Easy and tasty!

    I made this for my grandkids for lunch. I followed recipe directions and made my rice separately, using instant brown rice. Next time, I will add extra liquid to the beans and salsa and cook the instant brown rice in the pan with them. I used Fat Free vegetarian baked beans, so this will go on my "Fridays in Lent" list :-) It was very filling and the kids liked it. They both said they would like to have it again. I also think it would make a good burrito filling with some extra ingredients added to it.

    Quick and and easy.

    I had rice left over and used no fat baked beans. just what I was looking for to finish off the rice. Heated in microwave. I live by my self so reduced quatity of each using 1/2 can of beans.

    Tex-Mex Beans & Rice

    I made this, to for try something new. I don't have a stove or oven, but I do have a microwave. The only thing I would adjust is using MILD salsa for the first time, unless you want a little heat. The jar of salsa I got was a 1lb. jar, use 3/4 jar for a little less overkill. My version, Microwave cooking uses 2-15oz cans of pork beans, 2 cups of Minute Rice and 3/4 cup salsa. Cook the rice in a microwave bowl as directed. In a seperate bowl, mix salsa and beans together, microwave until hot. Mix together and stir the rice, salsa and beans and serve.

    Tex-Mex Beans & Rice

    I wasn't a fan. My husband said it was "good". It has a unique flavor... wasn't bad, just not my fav and not gonna make it again!!
