  • 1/4

    cup crunchy peanut butter

  • 2

    tablespoons honey

  • 2

    tablespoons orange juice

  • 1

    teaspoon soy sauce

  • 1/2

    teaspoon ground ginger

  • 1/3

    of a 1-pound package fettuccine pasta, cooked and drained (about 3 cups)

    cups cubed cooked chicken

  • 4

    cups mixed salad greens

  • 1 1/2

    tablespoons chopped red bell pepper

  • 1 1/2

    tablespoons chopped fresh cilantro

How to Make It

Step 1

Heat the picante sauce, peanut butter, honey, orange juice, soy sauce and ginger in a 10-inch skillet over medium heat until the mixture is hot and bubbling.

Step 2

Add the fettuccine and chicken to the skillet and toss to coat. Serve the chicken mixture over the salad greens. Garnish with the red pepper and cilantro.

    Tasty

    I used the bottle of Pace (medium spice), 1/2 of a small jar of peanut butter and doubled the rest. I wanted more sauce. I was surprised that the lettuce and cilantro worked so well with it. Next time I'm adding green onions.

    Thai Chicken Fettuccine Salad

    Made this dish last night and used rice noodles that I had, it was just like the pad Thai that I get at my face restaurant... Only thing is I would up the peanut butter and ok to make it a little more saucy ??

    This was great! I thought the use of hot sauce was odd for a Thai dish but it blended well with the PB.

    I did it with out the chicken, cilantro, red pepper and greens! I must say its rather tasty and very light!

    I do not like soy sauce but in this recipe it is a must...have absolutely loved this since I found it in your recipe booklet several years ago!
