    can (about 14 ounces) unsweetened coconut milk

  • 2

    cups uncooked jasmine rice

  • 1

    dash salt

  • 2

    tablespoons toasted dried unsweetened coconut

  • 2

    tablespoons thinly sliced green onion

How to Make It

Step 1

Heat the broth, coconut milk, rice and salt, if desired, in a 4-quart saucepan over medium heat to a boil.

Step 2

Reduce the heat to low.  Cover and cook for 15 minutes or until the rice is tender.  Let stand for 10 minutes.  Sprinkle with the coconut and green onion, if desired.

    So delicious!!!!!

    I sautéed a jalapeño, garlic and a small red pepper. Added coconut oil and fried 3 cups basmati rice. Added the whole container of Thai Ginger stock. Cooked for 15 minutes! Omg! It is pure heaven to smell and even better to taste! Super easy and delicious addition to any meal. Thank you Swanson!!!

    Great recipe for dinner

    My brother dropped by unexpectedly so I had three guys to feed - hubby, my 21-year-old boy-man, and my brother. I didn't have enough steak for the four of us, but I did have two pounds of chicken thighs, some mangos and a can of cashews. I fried the cashews, cut up and lightly fried the chicken in 2 tbls. olive oil, added kosher salt and ground pepper, then combined the cashews and chicken with chunks of mangos. And I served this rice with it on the side. All the boys loved it! This rice is fantastic. I worried that the coconut would overwhelm it, but the flavors were well balanced.

    Easy and Delicious

    This was the easiest rice I've made and it is very tasty. 15 minute rice is great for a week night. You don't need any other extra seasoning, perfect as is!

    This was so good.

    My husband and I both loved this rice. I did not have coconut flakes or green onions. I served this with teriyaki meatballs and a big green salad. Nice Thai flavor. But if you like spicy hot food this will need some red pepper flakes or similar! I think this would be a good way to make quinoa, too.

    Made this recipe with brown rice instead of jasmine. But it turned out delicious. Restaurant quality delicious. Mixed very well with my Thai curry chicken that I make. Highly recommend!
