package (1 pound) uncooked medium tube-shaped pasta (ziti)
bag (6 ounces) baby spinach, washed (about 4 cups)
cup reduced fat (part skim) ricotta cheese
cup shredded mozzarella cheese (about 4 ounces)
cup grated Parmesan cheese
small clove garlic, minced
teaspoon ground black pepper
Set the oven to 350°F. Prepare the ziti according to the package directions in a 6-quart saucepot. Add the spinach during the last minute of the cooking time. Drain the ziti and spinach well in a colander. Return them to the saucepot.
Add the sauce, ricotta cheese, 1/2 cup mozzarella cheese, 1/2 cup Parmesan cheese, the garlic and black pepper to the ziti mixture and stir to coat. Spoon into a 13x9x2-inch baking dish. Sprinkle with the remaining 1/2 cup mozzarella and 1/4 cup Parmesan cheeses.
Bake for 30 minutes or until hot and bubbling.
