cups fresh cut up vegetables (broccoli, celery, peppers, carrots)
teaspoon garlic powderor 2 small cloves garlic, minced
pounds skinless, boneless chicken breast halves, cut into very thin strips
can (10 3/4 ounces) Campbell’s® Healthy Request® Condensed Tomato Soup
tablespoon rice wine vinegar
teaspoons low-sodium soy sauce
teaspoon hot pepper sauce
packages (3 ounces each ) chicken flavored ramen noodles
Spray a 10-inch skillet with vegetable cooking spray and heat over medium-high heat for 1 minute. Add the vegetables and garlic powder and stir-fry until the vegetables are tender-crisp. Remove the vegetables from the skillet. Remove the skillet from the heat.
Spray the skillet with the cooking spray and heat over medium-high heat for 1 minute. Add the chicken and stir-fry until well browned. Remove the chicken from the skillet.
Stir the soup, vinegar, soy sauce and hot pepper sauce in the skillet and heat to a boil. Reduce the heat to low. Return the vegetables and chicken to the skillet. Cook until the mixture is hot and bubbling, stirring occasionally.
Cook the noodles according to the package directions without the seasoning packets. (Reserve the seasoning packets for another use.) Drain the noodles well in a colander. Serve the chicken mixture over the noodles.
