These potatoes are so creamy and delicious they would make a great holiday side, or whip them up whenever you're in the mood for great tasting mashed potatoes.

    cups Swanson® Chicken Broth or Swanson® Certified Organic Chicken Broth or Swanson® Natural Goodness® Chicken Broth

  • 6

    potato (about 2 1/2 pounds), peeled and cut into 1-inch pieces (about 8 cups)

  • 1/2

    cup light cream

  • 1/2

    cup sour cream

  • 1/4

    cup chopped fresh chives

  • 2

    tablespoons butter

  • 3

    slices bacon, cooked and crumbled (about 3 tablespoons)

How to Make It

Heat the broth and potatoes in a 3-quart saucepan over medium-high heat to a boil. Reduce the heat to medium. Cover and cook for 10 minutes or until the potatoes are tender. Do not drain. Mash the potato mixture with the light cream, sour cream, chives, butter and 2 tablespoons bacon. Season to taste. Sprinkle with the remaining bacon.
Step 1

    Ultimate Mashed Potatoes

    I am just starting to learn how to cook..and let me tell you when I made this dish, my girlfriend and the kids LOVED it. Now I'm asked to make it often (Not sure if that's what I wanted...lol.).

    yummy

    Dinner time. Made this Mashed Potatoes without bacon though, and Chicken with Wild Mushroom Cream Sauce (no mushrooms - my roomie hates them) for my 2 best roomie ever. Everyone loved it. Definitively will do it again; so yummy.

    We really liked it.

    I washed the potatoes real well and used the entire potato. It was delicious and very healthy.

    Very good

    I would add more bacon and use fat free 1/2 and 1/2. Also, I use Neufchatel cheese that has less fat. If I am going to have fat in this dish, I prefer it be the bacon. Butter and chives are essential for us in this recipe.
