    package  refrigerated or thawed frozen breaded chicken tenders, cut into bite-sized strips

    large zucchini, cut in half lengthwise and thinly sliced (about 4 cups)

    jar (7 ounces) whole roasted sweet pepper, drained and thinly sliced

    cup uncooked instant brown rice

  • 1

    can (10 1/2 ounces) Campbell’s® Condensed Cream of Celery Soup or Campbell's® Condensed 98% Fat Free Cream of Celery Soup

How to Make It

Heat the oven to 375°F. Spray a 3-quart shallow baking dish with vegetable cooking spray. Stir the chicken, zucchini, peppers and rice in the baking dish. Stir the soup, water and sour cream in a medium bowl. Pour the soup mixture over the chicken mixture. Cover the baking dish. Bake for 35 minutes or until the rice is tender. Let stand for 10 minutes. Stir the rice before serving.

    yummy with a few changes

    The first time I followed the recipe but it needed some changes. Instead of the tasteless chicken tenders I used left over Rotisserie chicken, fresh red bell peppers, cream of chicken soup & instead of 1 soup can of water I used 3/4 with 1 little package of chicken stock & what a wonderful casserole! Yes I will make over & over. My husband loved it. After 50 years of marriage & no children to please I am always looking for something different, good & easy for the two of us.

    Delicious! Easy! Used Cream of Asparagus Soup instead. I can taste every veggie! GREAT

    Zucchini, Chicken & Rice Casserole

    I made my own breaded chicken tenders and cut them into bite size pieces. I also substituted Cream of Potato soup instead of the Cream of Celery soup. It worked out great and my husband loved it. I'll make it again.
