Step 1
Set the oven to 400°F. While the oven is heating, spray a 13x9x2-inch baking dish with vegetable cooking spray.
Step 2
Season the potatoes as desired. Layer 4 cups potatoes, onion, ham, salsa verde and cheese in the baking dish. Top with the remaining potatoes. Spray with the cooking spray.
Step 3
Bake for 45 minutes or until the potatoes are tender.

OK, so I joined (which was a painful process) just to review this dish...which was absolutely, unexpectedly awesome, especially when topped with an over easy egg. Make it, you won't be disappointed!

Just made this for dinner tonight as I had a lot of leftover ham. So easy and delicious!...and I don't even like spicy foods all that much. I did substitute chopped onion for onion powder and sprinkled a bit of garlic powder as someone else suggested--those were my only changes. Top with sour cream and dig in!
This is going to be a staple in our house
It came out super yummy with just enough kick. I WILL be making this as a staple in our menu, be it for breakfast, lunch or dinner!
Cheddar Ham & Potatoes Verde
I thought the basic idea of this recipe was good, but I did a couple things differently. I just mixed all 7 cups of potatoes in with the rest of the ingredients. I added 1/2 cup sour cream and that gave it a nice creamy flavor. I also added 1/4-1/2 tsp of garlic powder and used onion powder instead of the onion for my picky eaters. I also added some cheese on top about 5 minutes before pulling it out of the oven. Adding a couple cooked scrambled eggs is a nice way to fill it out a bit more. It's also good with red salsa, I puree mine for about a minute before mixing in.
