Sautéed zucchini combines with farfalle pasta, a savory Italian sauce and mozzarella cheese for an easy and delicious skillet pasta dish that can’t be beat. It’s loaded with great flavor and ready in just 30 minutes.

  • 1 tablespoon olive oil
  • 2 medium zucchini, sliced (about 3 cups)
  • 1 jar (24 ounces) Prego® Florentine Spinach & Cheese Italian Sauce
  • 8 ounces (1/2 of a 1-pound package) farfalle (bow tie) pasta, cooked and drained
  • 1 cup shredded mozzarella cheese (about 4 ounces)


  • Step 1

    Heat the oil in a 12-inch skillet over medium heat. Add the zucchini and cook 5 minutes or until tender-crisp, stirring occasionally.

  • Step 2

    Stir the sauce and farfalle in the skillet and cook until the mixture is hot and bubbling.  Stir in the cheese just before serving.

    Our grocery store didn't have the suggested sauce so I used an organic marinara instead. I sautéed a few cloves of garlic with the olive oil then added a package of spinach along with the zucchini. It was delicious with plenty of leftovers! This meatless dish was a hit with my meat loving husband and my two kiddos, ages 1 & 6.
