Heat the oil in a 12-inch skillet over medium heat. Add the zucchini and cook 5 minutes or until tender-crisp, stirring occasionally.

Everyone Loved It!
Our grocery store didn't have the suggested sauce so I used an organic marinara instead. I sautéed a few cloves of garlic with the olive oil then added a package of spinach along with the zucchini. It was delicious with plenty of leftovers! This meatless dish was a hit with my meat loving husband and my two kiddos, ages 1 & 6.
