Easy Irish Potato Soup

This recipe for Irish Potato Soup is super simple to make, thanks to the condensed chicken broth.  The rich concentrated flavor of the broth helps keep the rest of the ingredient list short.  The potatoes, celery and green onion simmer in the broth for maximum flavor.  If you have an immersion blender, this is a one-pot recipe, since you can blend it into a smooth creamy soup right in the pot!  Irish Potato Soup is a great comfort food option anytime, but will be especially welcome served with some crusty bread on a chilly day.

Ingredients

  • 1 tablespoon butter
  • 1 stalk celery, finely chopped (about 1/2 cup)
  • 4 green onion, sliced (about 1/2 cup)
  • 1 can (10 1/2 ounces) Campbell’s® Condensed Chicken Broth
  • 1/2 cup water
  • 3 medium potato, peeled and sliced 1/4-inch thick (about 3 cups)
  • 1 1/2 cups milk

Instructions

  • Step 1

    Heat the butter in a 4-quart saucepan over medium heat.  Add the celery and green onions and cook until tender.

  • Step 2

    Stir the broth, water and potatoes in the saucepan and heat to a boil.  Reduce the heat to low.  Cover and cook for 15 minutes or until the potatoes are tender. Remove the saucepan from the heat (don't drain off the broth mixture, though).

  • Step 3

    Add the milk to the saucepan.  Using an immersion blender, blend until the mixture is smooth (if you don't have an immersion blender, add the milk and blend in a regular blender).  Season to taste with salt and pepper and heat until hot.  Sprinkle with additional sliced green onions before serving, if desired.
