Easy Chicken Chili with White Beans

Chili is the perfect game day party food.  This flavorful chicken chili takes less than 30 minutes and can easily be doubled.  For ease of serving, place the chili in a slow cooker on the "warm" setting and offer toppings such as sour cream, diced avocado or corn chips to allow guest to customize!

Ingredients

  • 1 large onion, diced (about 1 cup)
  • 1 teaspoon ground cumin
  • 1 tablespoon chili powder
  • 1 can (10 1/2 ounces) Swanson® Premium White Chunk Chicken Breast in Water, drained
  • 1 can (15 ounces) white navy beans
  • 1 medium red bell pepper, diced (about 1 cup)
  • 1 cup Swanson® Chicken Broth or Organic Free-Range Chicken Broth or Natural Goodness® Chicken Broth
  • 1 can (4 ounces) green chiles
  • 1/4 cup shredded Cheddar cheese

Instructions

    • Ingredient Note: Or you may use 3 cans (4.5 ounces each) Swanson® Premium White Chunk Chicken breast in Water, drained, in place of the larger can.
  • Step 1

    Spray a 2-quart saucepan with vegetable cooking spray and heat over medium heat for 1 minute. Add the onion and cook for 3 minutes or until it's tender, stirring occasionally. Stir the cumin and chili powder in the saucepan.

  • Step 2

    Stir the chicken, beans, pepper, broth and chiles in the saucepan and heat to a boil. Reduce the heat to low and cook for 5 minutes.

  • Step 3

    Sprinkle with the cheese and serve immediately.

    I was surprised by that it tasted so good, considering I did not have to spend a great deal of time fixing it.

    Excellent base recipe that you can mix and match with. I added more beans and different kinds, doubled the broth, and used fresh peppers and chicken. If it were up to my husband he would have added spicier peppers as well.

    This was delicious and it has low point value for a weight watcher. I did not get 5 servings (more like 3) so I am unsure if some of the broth was lost in the cooking... I might add a bit more broth next time.Maybe I should not have drained the beans? I will be making this again.

    LOVE THIS RECIPE. It is extremely quick and really good. I use fresh chili peppers and I baked the chicken with chili powder and cumin and cut it up myself. It was still fast to make. I am making it again.
