We’ve made making mashed potatoes as easy and delicious as possible! Start with red potatoes, so there’s no need to peel. Put them in the slow cooker whole, so there’s no need to cut. Cover them with broth so there’s no need to drain. Let your slow cooker get them nice and tender. Then simply mash right in the cooker and load up with a few delicious ingredients for a side dish that will take center stage!

Step 1
Place the potatoes into a 6-quart slow cooker. Add the broth.
Step 2
Cover and cook on HIGH for 4 hours or until the potatoes are tender. Do not drain.
Step 3
Mash the potatoes and broth in the cooker. Stir in 1 cup Cheddar cheese, the cream cheese, butter, bacon and green onions. Season to taste. Top with the remaining Cheddar cheese. Serve immediately or keep on WARM in slow cooker for up to 2 hours. Stir before serving.

I made these Slow Cooker Loaded Mashed Potatoes for Thanksgiving, the prep was so quick and easy that I thought I had forgotten an ingredient. When they were finished and I tasted them, all I can say is WOW!! Not only are they easy to make but the taste is unbelievably delicious.

This (Christmas) is the second time I've made these. The first time I followed the recipe exactly as written. The potatoes came out lumpy and kinda dry. This time I added 3 cups of chicken broth instead of 2 and the potatoes came out smooth and creamy (the way I like them). If you prefer lumpier mashed potatoes, use 2 cups chicken broth. If you prefer smoother potatoes, use 3 cups. Also, next time I will use sour cream instead of cream cheese. Otherwise, these are great mashed potatoes.

Made these for about 15 people and they all loved it and asked me to make again this year. I followed the recipe as said and they were perfect. I did mash by hand at first and then used a blender to smooth them out more.
