Broccolini & White Beans in Vegetable Broth

This perfect combination of broccolini, garlic and white beans is simmered in a savory vegetable broth for a vibrant vegetable dish full of fresh flavor. Broccolini, sometimes referred to as baby broccoli is like broccoli but it has more slender stalks and a milder, sweeter taste. Infused with the flavors of garlic and Parmesan, this Broccolini & White Beans is an easy and impressive side dish or add extra beans and serve over polenta for a quick and easy vegetarian main dish!     

Ingredients

  • 2 tablespoons olive oil
  • 5 cloves garlic, chopped
  • 1/4 teaspoon crushed red pepper
  • 1 1/2 cups Swanson® Vegetable Broth
  • 1  pound broccolini, cut into 2-inch pieces (about 10 cups)
  • 1 can (about 15 ounces) white cannellini beans, rinsed and drained
  • 1/4 cup grated Parmesan cheese

  • Tips

    • You can substitute small broccoli florets for the broccolini.
    • For added texture and brightness, try adding toasted buttered breadcrumbs and grated lemon zest as a topping. Or top with 1/4 cup toasted pine nuts.
    • Try serving the broccolini mixture over hot cooked polenta as a vegetarian main dish.
    • You can increase the beans to 2 cans for a heartier dish.
  • Step 1

    Heat the oil in a 12-inch nonstick skillet over medium-low heat.  Add the garlic and crushed red pepper and cook and stir for 2 minutes or until fragrant.

  • Step 2

    Increase the heat to high.  Add the broth and heat to a boil.  Add the broccolini.  Reduce the heat to low and cook for 8 minutes or until tender, stirring occasionally.  

  • Step 3

    Stir in the beans and cook until hot.  Season to taste with salt and pepper.  Sprinkle with the cheese before serving.
