Chicken with Peas & Quinoa

Ever tried quinoa?  It makes a nice substitute for rice or couscous, and this recipe is a delicious introduction to its fabulous taste and texture.

  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breast tenders
  • 1 teaspoon smoked paprika
  • 1 cup uncooked quinoa, rinsed
  • 1 1/2 cups Swanson® Chicken Broth or Chicken Stock
  • 1 jar (24 ounces) Prego® Veggie Smart® Smooth & Simple Italian Sauce
  • 10 ounces (1 package) frozen peas, thawed


  • Step 1

    Heat the oil in a 12-inch skillet over medium-high heat.  Add the chicken and cook for 10 minutes or until well browned on both sides.  Remove the chicken from the skillet, cover and keep warm.

  • Step 2

    Add the paprika and quinoa to the skillet and stir to coat.  Stir in the broth and sauce and heat to a boil.  Reduce the heat to medium.  Cover and cook for 15 minutes or until the quinoa is tender.  Stir in the peas.  Return the chicken to the skillet.  Cook until the chicken is cooked through.

    This recipe is a really delicious one-dish meal. I was short on broth and only used about half the amount of broth/sauce recommended but the dish came out great (I think keeping the cover on while the quinoa was cooking helped). Also found that the quinoa needed a few more minutes to fully cook. My husband is fairly picky but he really enjoyed it. Overall an awesome nutritious meal!

    Best way I have found to cook quinoa! I did saute some onion and garlic before I added the quinoa to add a little more flavor. My whole family, including my 2 year old, loved it.

    This recipe is awesome. It's so simple and easy to make with few ingredients. My boyfriend loves this and he is quite the food critic. I did make some changes to it after I made it by recipe. Always make something directly following the directions the first time....anyway. I decided to saute some onions and garlic before adding the quinoa and paprika to the mix. (I cook the chicken completely separately). Then add the broth and sauce. I use my own sauce that I make way ahead of time. It's great for this. I also add some Red Pepper Flakes to add a little spice to it. My boyfriend and I love spicy food. With that, this recipe is suburb. I make it all the time.

    My family was hesitant but decided to go for it. Luckily they did because it will definitely be one of our family favorites! They loved the texture and taste. :)

    Rinsing the quinoa was difficult and I didn't find the overall dish very flavorful.
