Ingredients

  • 1 pound boneless, skinless chicken breast, cut into thin strips
  • 2 tablespoons cornstarch
  • 2 tablespoons vegetable oil, divided
  • 1 large onion, chopped (about 1 cup)
  • 4 cups Swanson® Ramen Chicken Broth
  • 8 ounces uncooked spaghetti
  • 4 ounces snow peas (1 1/2 cups), strings removed
  • 1 large carrot, peeled and cut into 1 1/2-inch long matchsticks (about 3/4 cup)
  • 2 sliced green onion (scallion) (about 1/4 cup)

Instructions

  • Step 1

    Season chicken with salt and pepper and toss with cornstarch. Heat 1 tablespoon oil in 12-inch nonstick skillet over medium-high heat. Add the chicken and cook, stirring occasionally, 4 minutes or until no longer pink. Remove chicken from skillet.

  • Step 2

    Heat the remaining 1 tablespoon oil in the skillet over medium heat and cook onion, stirring occasionally, 5 minutes or until soft. Add broth and bring to a boil. Add spaghetti and cook 5 minutes. Stir in snow peas and carrots. Continue cooking additional 7 minutes or until pasta is tender, stirring occasionally.

  • Step 3

    Stir in cooked chicken and cook 2 minutes until heated through. Let stand 5 minutes. Garnish with green onions.
