Step 1
Cook the beef and onions in a 12-inch skillet over medium-high heat until the beef is well browned, stirring often to separate meat. Pour off any fat.
Step 2
Stir the beef mixture, stock, picante sauce, tomato paste, chili powder, cumin and raisins in a 6-quart slow cooker.
Step 3
Cover and cook on LOW for 7 to 8 hours. Top the beef mixture with the almonds. Serve with the rice.
Smells sooo good!
To my knowledge I've never had picadillo so I don't have anything to compare it to. I tried this recipe because it had easy to find and on-hand pantry items. This is simmering in the slow cooker and I could not help but take a small taste this afternoon. My family is going to love it, and I'm glad I doubled the recipe. (However, I did not double the broth, I just added 1 cup more. Just enough liquid.) It's chilly and getting ready to sleet and ice. We can be snuggled in for a long weekend with yummy leftovers. I did think it would be a bit more spicy. You might want to add a punch if you like spicy. It still has plenty of flavor just as the recipe is written. We are having a tropical fruit salad as a side. Perfect pair!
