Easy to prepare in 2 quick steps, this tasty cauliflower dish is a great alternative to mashed potatoes.  You'll get a whole lot of flavor without a lot of fuss - ready to serve in about 20 minutes.

Ingredients

  • 4 cups cauliflower florets
  • 1 1/4 cups Swanson® Chicken Broth or Organic Chicken Broth or 33% Less Sodium Chicken Broth
  • 4 cloves garlic, peeled and smashed
  • 2 tablespoons grated Parmesan cheese
  • 1 tablespoon butter

Instructions

  • Step 1

    Heat the cauliflower, broth and garlic to a boil in a 10-inch skillet over high heat. Reduce the heat to medium. Cover the skillet and cook for 15 minutes or until the cauliflower is tender.

  • Step 2

    Mash the cauliflower mixture in the skillet and stir in the Parmesan cheese and butter. Season to taste.
