This Creamy Tomato Chicken with Bacon & Spinach is a simple skillet chicken dish but the smoky tomato cream sauce that simmers with the chicken makes it something really special.  And it's still super-simple to make!  Just cook some bacon until crisp, then saute seasoned chicken in the drippings for extra flavor.  Onion and garlic and toasted spices add another layer, balanced by a smoky fire-roasted tomato sauce.  The chicken simmers in the sauce with some cream stirred in at the end for extra richness- perfect for a weeknight dinner.  Serve Creamy Tomato Chicken with Bacon & Spinach with some crusty bread to soak up all that amazing sauce!

Ingredients

  • 4 slices bacon (about 4 ounces)
  • 1 3/4 pounds boneless, skinless chicken breast
  • 1 1/2 teaspoons ground cumin (amount divided in recipe steps below)
  • 1 1/2 teaspoons dried oregano leaves (amount divided in recipe steps below)
  • 1 1/2 teaspoons smoked paprika (amount divided in recipe steps below)
  • 1 tablespoon olive oil
  • 1 large onion, chopped (about 1 cup)
  • 3 cloves garlic, minced
  • 1/4 cup Swanson® Natural Goodness® Chicken Broth or water
  • 10 ounces fresh baby spinach
  • 1 jar (23.5 ounces) Prego® Fire Roasted Tomato Pasta Sauce
  • 1/4 cup heavy cream

Instructions

  • Step 1

    Cook the bacon in a 12-inch skillet over medium heat until crisp. Remove the bacon from the skillet and drain on paper towels. Pour off all but 1 tablespoon drippings from the skillet.

  • Step 2

    Season the chicken with 1 teaspoon each cumin, oregano and paprika. Heat the skillet over medium-high heat.  Add the chicken to the drippings in the skillet and cook for 10 minutes or until browned on both sides. Remove the chicken from the skillet.

  • Step 3

    Reduce the heat to medium.  Heat the oil in the skillet.  Add the onion and cook for 5 minutes or until tender crisp. Add the garlic and the remaining cumin, oregano and paprika and cook for 1 minute, stirring often.

  • Step 4

    Add the broth and heat to a boil, stirring to scrape up the browned bits from the bottom of the skillet.  Stir in the spinach and cook until wilted. Stir in the sauce and cream.

  • Step 5

    Return the chicken to the skillet.  Reduce the heat to medium-low.  Cook for 5 minutes or until the chicken is done. Season to taste with salt and pepper. Sprinkle the chicken mixture with the cooked bacon before serving.
