This one-dish recipe for Chicken Parmesan Casserole gives you all the flavor of chicken Parmesan but without the work. Tender chicken?  Yes.  Melty cheese?  Yes.  Crunchy breadcrumbs?  Yes!  With this baked chicken Parmesan recipe, everything, including the uncooked chicken and pasta, goes right into one dish. The sauce is the key ingredient- the pasta and chicken cook in the sauce, saving time and prep and adding tons of flavor.  We used Prego Creamy Vodka Sauce but Four Cheese or Marinara will work, too. It's comfort food that is so quick and easy you can make it anytime!

Ingredients

cost per recipe: $10.56

  • 2 tablespoons olive oil
  • 1 cup panko
  • 1 1/4 pounds boneless, skinless chicken breast, cut in 1-inch pieces
  • 1 jar (24 ounces) Prego® Creamy Vodka Sauce or Prego® Farmers' Market Four Cheese Sauce
  • 1 3/4 cups Swanson® Natural Goodness® Chicken Broth
  • 8 ounces uncooked rotini (spiral) pasta (about 2 1/2 cups)
  • 4 ounces shredded mozzarella cheese (about 1 cup)
  • 1 tablespoon grated Parmesan cheese
  • 2 tablespoons chopped fresh basil leaves (optional)

Instructions

  • Step 1

Heat the oven to 400°F.  While the oven is heating, stir 1 tablespoon oil and panko in a medium bowl.

  • Step 2

Place the chicken into a 13x9x2-inch baking dish.  Season the chicken with salt and pepper.  Drizzle with the remaining 1 tablespoon oil.  Add the sauce, broth and rotini to the baking dish and stir to coat.  Cover the baking dish.

  • Step 3

Bake for 30 minutes or until the chicken is done and the rotini is tender.  Uncover the baking dish.  Stir the chicken mixture.  Sprinkle with the cheeses and the panko mixture.

  • Step 4

Bake for 5 minutes or until the panko mixture is golden brown.  Let stand for 5 minutes before serving.  Sprinkle with the basil, if desired.

This is the most flavorful and satisfying recipe. It's a quick and easy one dish meal to prepare. I also added frozen broccoli one night. Another night I added green beans from my garden. Both were delicious. This can be prepared ahead of time. Great for a dish over the holidays.
