When is it a good idea to rethink a classic like lasagna? When it’s an upgrade like One Pot Lasagna Soup! This soup recipe has everything you love about lasagna- all the flavors are there, but none of the work. Just sauté the beef and onion, add the rich tomato, basil and garlic sauce, savory beef broth and the noodles (they go in uncooked)! Top with dollops of ricotta and a sprinkle of mozzarella, which not only tastes great but looks beautiful, too. One Pot Lasagna Soup is a classic reimagined in the best way possible!
Season the beef with salt and pepper. Cook the beef and onion in a 6-quart saucepot over medium-high heat until well browned, stirring often to separate meat. Pour off any fat.
Stir in the broth, sauce and pasta and heat to a boil. Reduce the heat to medium. Simmer for 20 minutes or until the pasta is done, stirring occasionally.
Serve the soup topped with dollops of the ricotta cheese and sprinkled with the mozzarella cheese. Top with chopped fresh basil and grated Parmesan cheese, if desired.
