Can a jar of Italian sauce transform beef and veggies into a Slow-Cooked Italian Beef Stew that tastes like comfort in a bowl?  Yes!  The homemade taste of the thick, chunky tomato, basil and garlic sauce in this recipe is what keeps the rest of the ingredient list short.  Just add the beef, onion, garlic, sauce and wine to the cooker, cover and walk away (the beef cooks until fork-tender totally hands-free).  With only 10 minutes of prep time, soon your kitchen will be filled with the aroma of simmering Slow-Cooker Italian Beef Stew (waiting to eat it is the only thing that's hard about this recipe!).  Enjoy with a loaf of warm crusty bread or spooned on top of some creamy polenta!

Ingredients

  • 2 pounds boneless beef chuck roast, cut into 3/4-inch pieces
  • 1 large onion, diced (about 1 cup)
  • 2 cloves garlic, minced
  • 1 jar (24 ounces) Prego® Chunky Tomato, Basil & Garlic Italian Sauce
  • 1/2 cup dry red wine (we like pinot noir)
  • 16 ounces frozen peas and carrots

  • Tips

    • To make in an Instant Pot®: Increase the wine to 1 cup.  Add the beef, onion, garlic, sauce, wine and peas and carrots to a 6-quart Instant Pot®.  Lock the lid and pressure cook on high for 15 minutes.  When done, press cancel and use the quick release method to release the pressure.  Uncover and select Saute.  Cook, uncovered for 10 minutes or until the sauce is thickened.
    • You can also slow-cook on HIGH for 3 to 4 hours or until the beef is fork-tender.
  • Step 1

    Season the beef as desired.  Add the beef, onion, garlic, sauce and wine to a 6-quart slow cooker.

  • Step 2

    Cover and cook on LOW for 8 hours or until the beef is fork-tender, adding the frozen peas and carrots during the last hour of the cooking time.  Season to taste.  Serve the stew with crusty bread for dipping or over hot cooked egg noodles or polenta, if desired.
