Step 1
Heat the oil in a 10-inch skillet over medium-high heat. Add the chicken and cook until it's well browned, stirring often.
Step 2
Stir the chicken, broth, picante sauce, garlic, cumin, beans, corn and onion in a 3 1/2-quart slow cooker.
Step 3
Cover and cook on LOW for 8 to 9 hours or until the chicken is cooked through.
Slow Cooked Southwestern Chicken & White Bean Soup
This was sooo good! My boyfriend and my sister loved it! I used a lot more chicken stock then what it called for and I also used red kidney beans instead of white. We also put some Frank's Red Hot Sauce in while it was cooking. We love things spicy! Sour cream was a great touch to add when you had your individual bowl. We also added potatoes like someone had mentioned. So tasty!!!
Call me picky, but this recipe just didn't do it for me. It tasted like plain ole white chicken chili that I make with a seasoning packet from the store. I was hoping to be wowed, with all the great ratings, but it seemed just average for me. Good, but nothing to add to the recipe file.
A great recipe for the crockpot. I also added more chicken broth and Pace salsa. In addition I added a tablespoon of lime juice. Judging by empty crockpot, it passed teenage son's taste test!
I made this for a group of people and everyone loved it and asked for the recipe, I made a few small changes, such as camalizing the onion first, and extra garlic.
Thid was DELICIOUS!!!!!! We fallowed the original recipe and its one of my favorite meals!
