The creamy, cheesy layers of lasagna meet the zesty goodness of enchiladas in this easy, satisfying meal. Pace® Cilantro Jalapeño Lime Sauce is a delicious, tangy shortcut (no need to make your own salsa verde), while rotisserie chicken also saves you time in the kitchen.
Ingredients
- 3 1/2 cups coarsely shredded cooked chicken (about 1 pound / 1 whole rotisserie chicken)
- 1/2 cup Pace® Picante Sauce
- 1/2 cup sour cream
- 1 1/2 cups Pace® Signature Sauces Cilantro Jalapeño Lime Sauce, divided
- 16 (6-inch) corn tortilla
- 8 ounces Monterey Jack cheese, shredded (about 2 cups)
- 1/4 cup chopped fresh cilantro
- 1/4 cup thinly sliced red or white onion (from 1 small)
- 1 small (1 1/2 ounces) jalapeño pepper, thinly sliced into rings (about 1/4 cup)

Step 1
Preheat oven to 350°F. Grease a 2-quart baking dish with cooking spray. Set aside.

Stir together chicken, Pace® Picante Sauce, and sour cream in a medium bowl until all chicken is coated.

Spread 1/4 cup of the Pace® Cilantro Jalapeño Lime Sauce on bottom of prepared baking dish. Layer with 4 of the tortillas, 1/4 cup of the Cilantro Jalapeño Lime Sauce, 1 cup of the chicken mixture, and 1/2 cup of the cheese. Repeat layers twice more, ending with tortillas.

Spread remaining 1/2 cup Cilantro Jalapeño Lime Sauce over tortillas and sprinkle evenly with remaining 1/2 cup cheese.

Cover with foil and bake in preheated oven until cheese is melted, 15 to 18 minutes. Uncover and continue to bake until bubbly and browned, about 20 minutes. Top with cilantro, onions, and jalapeños.
