Heat the oil in a 12-inch skillet over medium-high heat. Add the chicken and cook for 10 minutes or until well browned on both sides.
Stir the picante sauce in the skillet and heat to a boil. Reduce the heat to medium. Cover and cook for 5 minutes or until the chicken is cooked through. Serve the chicken and sauce with the rice.

Great recipes but inside of rice I used thin spagetti cooked with onions and garlic and seasconed with Southwestern Chipolte.
I make this with boneless thighs and let it simmer for 23 minutes. I added a can of diced tomatoes to stretch the sauce out. We cook this at least once a month.
I sprinkle a little bit of shredded cheese on top...delicious!
I cut the chicken into piices and browned it, then I added Pace and put it over cooked rice served with a veggie. Yumm
