Ingredients

  • 8 ounces uncooked penne pasta
  • 1 pound boneless, skinless chicken breast, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 1 medium onion, halved and sliced (about 3/4 cup)
  • 1 red bell pepper, cut into strips (about 1 cup)
  • 8 ounces andouille sausage, sliced
  • 1 jar (14.5 ounces) Prego® Cajun Alfredo Pasta Sauce
  • 2 tablespoons chopped fresh parsley, optional

Instructions

  • Step 1

    Cook and drain the penne according to package directions.  Season the chicken with salt and pepper, if desired.

  • Step 2

    While the pasta is cooking, heat the oil in a large nonstick skillet over medium-high heat.  Add the chicken, then the onion and pepper and cook undisturbed, for 3 minutes.  Stir in the andouille sausage and cook for 4 minutes or until the chicken is lightly browned and vegetables are tender.

  • Step 3

    Stir in the sauce and bring to a simmer. Reduce the heat and simmer for 3 minutes or until chicken is no longer pink in the center (with an internal temperature of 165°F). Serve over the cooked penne or stir to combine and garnish with the parsley.
