Mexican Tortilla Lasagna

Surprise them with this kicked up version of lasagna...salsa, olives and lots of Cheddar cheese make this one of the best tasting dishes you can imagine.

Ingredients

  • 1  pound ground beef
  • 1 cup Prego® Traditional Italian Sauce or Tomato Basil Garlic Italian Sauce
  • 1 jar (16 ounces) Pace® Chunky Salsa (amount is divided in recipe steps below)
  • 1 tablespoon chili powder
  • 8 (6-inch) flour tortilla
  • 1 1/2 cups shredded Cheddar cheese (about 6 ounces)
  • 1 can (3.8 ounces) sliced, pitted black olives, drained (optional)
  • 1 green onion, sliced (about 2 tablespoons) (optional)

    • Easy Substitution: Substitute 4 skinless, boneless chicken breasts (about 1 pound), cut into cubes, for the beef.  Cook the chicken and pepper in a 12-inch nonstick skillet over medium-high heat until the chicken is well browned and cooked through, stirring often.  Proceed as shown above.
  • Step 1

    Heat the oven to 350°F.  Season the beef with salt and pepper.  Cook the beef in a 12-inch skillet over medium-high heat until the beef is well browned, stirring often to separate meat.  Pour off any fat.

  • Step 2

    Stir the Italian sauce, 1 1/4 cups salsa and the chili powder in the skillet and heat to a boil.  Reduce the heat to low.  Cook for 10 minutes, stirring occasionally.

  • Step 3

    Spread the remaining 1/2 cup salsa in a 13x9x2-inch baking dish.  Arrange 4 tortillas on the bottom of the dish, overlapping if needed.  Layer with half the beef mixture, 3/4 cup cheese and half the olives.  Repeat with the remaining tortillas, beef mixture, cheese and olives.

  • Step 4

    Bake for 20 minutes or until hot and the cheese is melted.  Let stand for 20 minutes.  Sprinkle with the green onion before serving, if desired.

    Everyone love this dish. Was told to make again. I ran out of Pace sauce to put on bottom of the pan so I used the pasta sauce.

    I usually lie to my daughter about what I'm cooking because she is super picky. Well after putting this on her plate and hearing her say "wow mom this is good, what is it?" I knew we had a winner!

    My family all loved this. They always say it's a keeper when they want it again and again!! Made as is...next time will try the corn tortillas and add some sour cream to the cheese.

    I used gr. turkey instead of beef, mixed with 1/2 pack of taco seasoning, the flour tortillas, mixed the first layer of cheese with 1/2 c. sour cream and 1 small egg, Next time will try with corn tortillas. I cooked at 350...wanted egg to be well cooked. Great family meal!

    DELISH!!! I used corn tortillas instead of flour & loved the taste. My family requested that I add this to my personal menu. I usually cook to have left overs for the next night & lunch for hubbie:-) Since EVERYONE got 2nds, it didn't leave as much left overs as I'd like, I'll probably double the recipe next time to make sure there is plenty of left overs! Very filling meal as well!
