Season the chicken as desired.
Place the chicken into a 6-quart slow cooker. Add the beans, sauce and thyme and stir to coat. Cover and cook on HIGH for 3 hours or until the chicken is cooked through. Start cooking the fettuccine according to the package directions about 20 minutes before the end of the cooking time.
Before turning off the cooker, stir in the spinach and vinegar and cook until the spinach is wilted. Season to taste. Serve the chicken mixture over the fettuccine. Sprinkle with the cheese.
Just made this recipe tonight and my boyfriend and I loved it! The only thing I would change is substituting another ingredient for the white kidney beans -- I'm thinking perhaps mushrooms. The flavor of the beans just didn't seem to mesh well with the rest of the dish. Otherwise it was super yummy! Will be making again.
