Ingredients

  • 1 tablespoon olive oil
  • 6 ounces dried chorizo sausage, sliced 1/4-inch thick
  • 1 medium (8 ounces) yellow onion, chopped (about 1 1/2 cups)
  • 3 garlic cloves, finely chopped (about 1 tablespoon)
  • 1 teaspoon chili powder
  • 1 1/2 cups uncooked long grain white rice
  • 3 cups Swanson® Unsalted Chicken Broth
  • 1/2 cup Pace® Picante Sauce
  • 1/3 cup drained pimento-stuffed olives, sliced crosswise (optional)
  • 1 cup frozen sweet peas
  • 1 teaspoon chopped fresh parsley

Instructions

  • Tips

    • Don’t rinse the rice before adding it to the pan, we want it to be as starchy as possible.
    • Store leftovers (completely cooled) in an airtight container in the fridge for up to 1 week.
  • Step 1

    Heat oil in a large high-sided skillet over medium. Add chorizo and cook, stirring occasionally, until browned and crisp, about 5 minutes. Remove with a slotted spoon to a paper towel-lined plate, reserving drippings in skillet.

  • Step 2

    Add onion and cook, stirring often, until softened, about 4 minutes. Add garlic and chili powder; cook, stirring constantly, until fragrant, about 1 minute. Add rice and cook, stirring constantly, until coated with seasonings, about 1 minute.

  • Step 3

    Stir in broth, Pace® Picante Sauce, olives, and Pace® Hot Honey Chipotle Sauce; bring to a boil over medium-high heat. Reduce heat to medium-low to maintain a simmer, cover, and cook, until rice has cooked through, about 15 minutes.

  • Step 4

    Add peas and chorizo to skillet and fold to combine. Cover skillet and remove from heat; let sit, covered, until peas are bright green and rice is fluffy, about 5 minutes. Sprinkle with parsley and serve with lemon wedges.
