This easy, endlessly customizable recipe is packed full of punchy flavors, from savory chorizo to the sweet smokiness of Pace® Hot Honey Chipotle Signature Sauce. It’s also the perfect base for using up leftover veggies, or adding your favorite proteins—incorporate some chicken or toss in a few scallops and prawns to play up the dish’s paella profile.
Step 1
Heat oil in a large high-sided skillet over medium. Add chorizo and cook, stirring occasionally, until browned and crisp, about 5 minutes. Remove with a slotted spoon to a paper towel-lined plate, reserving drippings in skillet.
Step 2
Add onion and cook, stirring often, until softened, about 4 minutes. Add garlic and chili powder; cook, stirring constantly, until fragrant, about 1 minute. Add rice and cook, stirring constantly, until coated with seasonings, about 1 minute.
Step 3
Stir in broth, Pace® Picante Sauce, olives, and Pace® Hot Honey Chipotle Sauce; bring to a boil over medium-high heat. Reduce heat to medium-low to maintain a simmer, cover, and cook, until rice has cooked through, about 15 minutes.
Step 4
Add peas and chorizo to skillet and fold to combine. Cover skillet and remove from heat; let sit, covered, until peas are bright green and rice is fluffy, about 5 minutes. Sprinkle with parsley and serve with lemon wedges.
