Heat the oven to 425°F.
Heat the soup, salsa, beans and chicken in a 1-quart saucepan over medium heat until the mixture is hot and bubbling.
Place the tortillas onto 2 baking sheets. Spread about 1/3 cup soup mixture onto half of each tortilla to within 1/2 inch of the edge. Brush the edges of the tortillas with water. Fold the tortillas over the filling and press the edges to seal.
Bake for 5 minutes or until the filling is hot. Cut the quesadillas in half, making 20 pieces. Serve with the Fiesta Rice.
This recipe was so simple
Very quick and easy meal to make. The only thing is I am not a big fan of canned chicken so next time I'll go with the real deal. Also I doubled the recipe. Doubling the recipe made two cans of cheese one can too much haha Besides that, it was great!!
Will Definitely Make This Again
This recipe was very good made with a corn and white bean salsa. I also put some shredded cheddar cheese inside and a very small amount of hot sauce to kick it up just a little bit.
This was a great meal...my family went back for seconds!
