Just saute some pancetta with crushed red pepper for heat, then add the potato gnocchi and a creamy tomato basil sauce. Top with mozzarella cheese and bake until perfectly melted. Cook and drain the gnocchi according to the package directions. While the gnocchi are cooking, heat the oven to 400°F.
Heat the oil in a 12-inch ovenproof skillet over medium-low heat. Add the pancetta and red pepper, if desired, and cook for 3 minutes. Add the cooked gnocchi and cook for 2 minutes.
Add the sauce and heat to a boil. Remove the skillet from the heat. Top with the cheese.
Bake for 5 minutes or until the cheese is melted. Sprinkle with the basil before serving, if desired.
