Set the oven to 400°F. Stir the ricotta cheese, spinach, 1 cup mozzarella cheese and the Parmesan cheese in a large bowl. Season with salt and pepper.
Spread 1 cup sauce in an 11x8x2-inch baking dish. Top with 3 lasagna noodles and half the spinach mixture. Repeat the layers. Top with the remaining sauce. Cover the baking dish.
Bake for 40 minutes. Uncover the dish. Sprinkle with the remaining mozzarella cheese. Bake for 10 minutes or until hot. Let stand for 20 minutes before serving.
GREAT VEGETARIAN DISH
I made this awesome dish for the first time last year for my church's men event. I'm about to make two and larger for our annual men conference at church. This is really easy but I didn't use that much water because for some reason it makes it watery.I'm so glad I finally found this recipe again after 2 days of searching. I forgot to save it last time-this time I did.
