Hearty Lasagna Soup

Are you in the mood for lasagna, but don't have the time?  Try this clever soup that has all the flavors of your favorite lasagna...and it's on the table in just 35 minutes.

  • 1 pound ground beef
  • 1 small onion, chopped (about 1/4 cup)
  • 1 teaspoon minced garlic
  • 1/4 teaspoon dried parsley flakes
  • 3 1/2 cups Swanson® Beef Broth or 50% Less Sodium Beef Broth
  • 1 can (about 14 .5 ounces) diced tomatoes
  • 1/4 teaspoon Italian seasoning, crushed
  • 1 1/2 cups uncooked mini lasagna noodle-shaped pasta (mafalda) or rotini pasta
  • 1/4 cup grated Parmesan cheese


  • Tips

    • Serving Suggestion: Top each serving of soup with a dollop of ricotta cheese mixed with chopped fresh basil.
  • Step 1

    Cook the beef, onion, garlic and parsley in a 6-quart saucepot over medium-high heat for 10 minutes, or until the beef is well browned, stirring often to separate meat. Pour off any fat.

  • Step 2

    Stir the broth, tomatoes and Italian seasoning in the saucepot and heat to a boil.

  • Step 3

    Stir the pasta in the saucepot. Reduce the heat to medium and cook for 10 minutes or until the pasta is tender. Stir in the cheese. Season to taste.  Serve with additional cheese, if desired.

    I have made this a few times and it's on the stove right now! I love it. It tastes like something thats complicated to make but it's not. Husband loves it too.

    The recipe as written is a bit bland, so I added a bit more herbs, a can of tomato sauce and paste and before adding the pasta I allow it to simmer, letting the flavors meld like meat sauce. I also use half italian sausage and half ground beef. This is more like lasagna and sooooooooooo good!

    I'm glad I made this. It was a last minute decision and was as easy as my original decision which was spaghetti. I wouldn't necessarily say it tastes like lasagna since its missing the ricotta but it's a flavorful dish none the less. My husband even went for seconds. Perfect for a cold winters night. I did add an additional can of beef broth and used lasagna noodles and just broke them up. Next time I'll add zucchini for an additional touch. This will serve 3 to 4 people comfortably.

    I spruced things up a bit with this soup recipe. I added tomato sauce, paste, carrots and onion. Instead of using the big pot I used the slow cooker with some seasonings and set it on low for 4 hours. It came out soooo delicious! Tip: cook noodles separate... that way, the soup doesn’t lose the broth

    This is a great soup when you aren't sure what to make and in a flash. Most everything is in the pantry so it's budget friendly too
