Air-Fryer Avocado Chicken Empanadas are air-fried dough pockets stuffed with chicken, cheese and avocado salsa.  You'll love them.  They're delicious.  And, when you see how easy it is to make these empanadas, you’ll be even more excited!   The avocado salsa brings the fresh flavor of avocado with no prep- so they're easy to make.  You can customize them to fit what you have at home.  Don't have empanada dough?  Use pizza dough.  Don't have an air fryer?  Bake the empanadas in your oven.  Final fact?  Everyone else will love them, too!


  • 1 1/2 cups cooked chicken
  • 2/3 cup Pace® Avocado Salsa- Mild
  • 2 green onion, chopped or 1/4 cup chopped fresh cilantro
  • 1 small red bell pepper, diced (about 1/2 cup)
  • 1/2 cup shredded Mexican blend cheese
  • 1/2 teaspoon hot Mexican chili powder
  • 1 teaspoon ground cumin
  • 1 package (14 ounces) empanada dough rounds (10 discos)


  • Tips

    • If you don't have an air-fryer, you can bake the chicken empanadas on a parchment-lined baking sheet at 375°F. for 15 minutes or until golden brown.
    • Make ahead and freeze for later!  You can freeze the uncooked chicken empanadas, then bake them right from the freezer!  When you're ready to eat, brush with vegetable oil and bake on a parchment-lined baking sheet at 350°F for 30 minutes or until golden brown.
    • Can't find empanada dough?  Use pizza dough instead!  Roll out and cut an 11-ounce refrigerated thin crust pizza dough into 8 (5-inch) rounds.
  • Step 1

    Heat the air fryer to 375°F.  Stir the chicken, salsa, green onions, red pepper, cheese, chili powder and cumin in a bowl.

  • Step 2

    Place 3 tablespoons chicken mixture in the center of each dough round.  Fold the dough in half over the filling and crimp the edges with a fork to seal.  Spray both sides of the filled empanadas with vegetable cooking spray.

  • Step 3

    Place the chicken empanadas into the air fryer basket (for small fryers, cook in 2 batches).  Air fry for 12 minutes or until golden brown, turning empanadas over halfway through cooking time.  Serve with additional salsa for dipping.
