What are Avocado Chicken Salad Sandwiches?  Instead of mayo, we used avocado salsa, which has all the flavor and creaminess of avocado but with no prep!  It makes an amazing chicken salad that's great as is, but we like it on thick slices of Italian bread with fresh red onion and cilantro (maybe add some slices of crispy bacon, too?).  Or you can wrap in tortillas or serve in lettuce cups for keto chicken salad- there really is no wrong way to serve it.  This Chicken Salad recipe is ready to eat in only 10 minutes, making it a great option for lunch or busy weeknights!

  • 3 cups diced cooked chicken
  • 3/4 cup Pace® Avocado Salsa- Mild
  • 1 small red onion, finely chopped (about 1/4 cup) or 1/4 cup thinly sliced green onions
  • 1/4 cup chopped fresh cilantro
  • 8 slices Pepperidge Farm® Italian White Bread, toasted
  • 4 green leaf lettuce leaves
  • 4 large tomato slice
  • 4 slices deli Monterey Jack cheese


  • Tips

    • For a creamier version, stir 1/4 cup mayonnaise into the salsa.
  • Step 1

    Stir the chicken, salsa, onion and cilantro in a bowl.  Season with salt and pepper.

  • Step 2

    Top 4 bread slices with the lettuce, tomato, chicken mixture, cheese and remaining bread slices.
