Step 1
Cook the beef in a 10-inch skillet over medium-high heat until it's well browned, stirring often to separate meat. Pour off any fat.
Step 2
Stir the picante sauce, tortillas and half of the cheese in the skillet and heat to a boil. Reduce the heat to low. Cover and cook for 5 minutes or until the beef mixture is hot and bubbling.
Step 3
Top with the remaining cheese. Serve with the sour cream and green onion, if desired.
So easy to make!
This recipe was so easy to make and it was delicious. Even my picky 2 and a half year old loved it. Instead of mixing the tortillas in we baked them and served the other ingredients on top of them. I will definitely be making this again.
Chewy Tortilas
This recipe was easy, and had nice flavors - but the finished meal felt and tasted unfinished. I used the amount suggested of tortillas but they were WAY too much. Very chewy, with not much flavor. It worked, but probably won't make it again.
So fast and so easy
I had everything except the green onions but that wasn't a problem. After a long day at work it was fast, easy, tastey and only one pan was dirty!
Beefy Enchilada Skillet
My 12 year old son was looking for a recipe he could make on his own, and this fit the bill. His dad and I both liked it a lot and he even cleaned his plate. He will be making it again soon. He added frozen corn and we topped the dish with tortilla chips and extra cheese.
This was delicious, we'll be making it again. I added some extra corn tortillas and extra salsa.
