A soft flour tortilla is the perfect vehicle for soft, fluffy scrambled eggs, savory sausage, and gooey cheese. But the Pace® Cilantro Jalapeño Lime Signature Sauce is what really takes this breakfast to the next level; it’s the ultimate zippy, bright complement to the tacos’ rich, delicious fillings.
Step 1
Preheat oven to 400°F. Whisk together eggs, salt, and pepper in a medium bowl; set aside.
Step 2
Melt butter in a large nonstick skillet over medium-high. Add sausage, poblano, and green onions; cook, stirring occasionally to crumble sausage, until browned and cooked through, about 5 minutes. Stir in Pace® Chunky Salsa or Pace® Picante Sauce, and cook, stirring constantly, until liquid evaporates, 1 to 2 minutes. Reduce heat to medium-low, and pour in egg mixture; cook, stirring and folding often with a flexible spatula to form large curds, until mixture is softly set, about 4 minutes.
Step 3
Arrange tortillas in a single layer on a large baking sheet, overlapping slightly. Spoon 1/3 cup of egg mixture over center of each tortilla, and sprinkle evenly with cheese. Bake in preheated oven until cheese is melted, about 3 minutes. Drizzle evenly with Pace® Cilantro Jalapeño Lime Sauce. Garnish with avocado, radishes, and cilantro. Serve with lime wedges.
