Smoky Cajun-seasoned chicken and zesty, crunchy slaw are the perfect pair in these easy, 20-minute weeknight tacos. Step 1
Preheat a large cast-iron skillet over medium-high heat for 5 minutes. While skillet preheats, prepare slaw: whisk together mayonnaise, Pace® Cilantro Jalapeño Lime Signature Sauce, and salt in a medium bowl. Add cabbage, celery, and scallions; toss to coat. Let sit 10 minutes, tossing occasionally.
Step 2
Rub chicken tenders with Cajun seasoning. Add 1 tablespoon of the oil to hot skillet and swirl to coat. Add tenders in a single layer, and cook, undisturbed, until deeply browned on underside, about 3 minutes. Flip chicken, add remaining 1 tablespoon oil, and cook, undisturbed, until browned on other side, 2 to 3 minutes. Stir in Pace® Chunky Salsa, and cook, stirring constantly, until most liquid has evaporated, and a thermometer inserted into the thickest part registers 165°F, 1 to 2 minutes. Transfer to a plate.
Step 3
To serve, place 2 warmed tortillas on a plate, and top each with 1 chicken tender and about 1/4 cup slaw. Garnish with scallions. Serve immediately with additional Pace® Cilantro Jalapeño Lime Signature Sauce.
