Ingredients

  • 1 tablespoon canola oil
  • 1 pound 85% lean ground turkey
  • 1 envelope (1-ounce) reduced sodium taco seasoning mix
  • 1 can (15-ounce) pinto beans or black beans, drained and rinsed
  • 1/2 cup Pace® Picante Sauce, plus more for serving
  • 5 flour tortillas, divided
  • 3/4 cup Pace® Salsa con Queso, divided
  • 1/3 cup Pace® Signature Sauces Classic Taco Sauce, divided
  • 8 corn tostada shells (crispy, flat tortillas)
  • 1 1/2 cups shredded Colby Jack cheese (about 6 ounces), divided
  • 1/4 cup sour cream, plus more for serving

Instructions

  • Tips

    • Planning your weekly menu? The turkey mixture can be made up to 1 week ahead and refrigerated in an airtight container.
    • If you can’t find tostada shells, tortilla chips can also provide that satisfying crunch—just try not to overlap them, so the stack stays neat.
    • Don’t have ground turkey? Try ground chicken, lean beef, or pork.
  • Step 1

Preheat oven to 350°F. Heat oil in a large cast-iron skillet over medium-high. Add turkey and cook, stirring occasionally to crumble, until browned and cooked through, about 5 minutes. Add taco seasoning and cook, stirring constantly, until turkey is coated and seasoning is fragrant, about 1 minute. Remove from heat and stir in beans and Pace® Medium Picante Sauce. Transfer to a bowl, and wipe skillet clean. You should have about 3 cups of the turkey mixture.

  • Step 2

Lay 1 flour tortilla flat in cleaned skillet. Spread 3 tablespoons of the Pace® Medium Salsa Con Queso and 1 tablespoon of the Pace® Classic Taco Signature Sauce on tortilla and top with 2 tostada shells, breaking as needed to fit and cover Salsa Con Queso and Classic Taco Sauce. Spoon 3/4 cup of the turkey mixture on top of shells and sprinkle evenly with 1/4 cup of the Colby Jack. Repeat layers 3 more times for 4 total, ending with a tortilla.

  • Step 3

Cover skillet with foil, and bake in preheated oven until cheese is melted and filling is hot, about 20 minutes. Uncover and sprinkle top evenly with remaining 1/2 cup cheese. Return to oven, and bake until cheese is melted, about 5 minutes.

  • Step 4

Remove from oven, and drizzle with remaining Classic Taco Sauce, spoon more Picante Sauce on top, and dollop with sour cream. Cut into quarters and serve immediately.
