  • 1 tablespoon olive oil
  • 1 small onion, diced (1/2 cup)
  • 2 cans (15 ounces each) no salt added garbanzo beans, drained and rinsed
  • 1 jar (16 ounces) Pace® Picante Sauce
  • 1 cup Swanson® Chicken Stock or Swanson® Vegetable Stock
  • 1/4 cup sour cream, plus additional as needed
  • 2 cups baby spinach
  • 1/4 teaspoon chili powder (optional)

  • Step 1

    Heat oil in a 12-inch skillet over medium heat. Add the onion and cook until fragrant and translucent, about 3 minutes. Season with salt and pepper to taste.
