That fast prep time is all thanks to a spicy, smoky blend of Pace® Medium Picante Sauce and Pace® Classic Taco Signature Sauce; the combo gives the dish a savory warmth and depth that pairs perfectly with juicy, tender shrimp. Serve over fluffy white rice to soak up every last drop of that delicious sauce.

Ingredients

  • 2 tablespoons olive oil, divided
  • 1 small white onion, chopped (about 1 1/2 cups)
  • 1 canned chipotle pepper in adobo sauce, finely chopped (about 1 tablespoon)
  • 3 medium garlic cloves, finely chopped (about 1 1/2 tablespoons)
  • 1 teaspoon dried oregano leaves
  • 1/2 teaspoon ground cumin
  • 1 jar (16-ounces) Pace® Picante Sauce
  • 2 tablespoons Pace® Signature Sauces Classic Taco Sauce (optional)
  • 1 1/2 pounds, large raw shrimp, peeled and deveined, tails on

  • Tips

    • Serve with cooked long-grain white rice, lime wedges, and chopped fresh cilantro.
    • You can store any leftovers in an airtight container in the fridge for up to 3 days. Reheat on the stove or in the microwave.
    • While this dish is traditionally made with a smooth sauce, you can skip the blending step to save time—it’ll still taste delicious. 
  • Step 1

    Heat 1 tablespoon of the oil in a large skillet over medium. Add onion, and cook, stirring often, until softened and brown around edges, 4 to 6 minutes. Add chipotle chile, garlic, oregano, and cumin; cook, stirring constantly, until fragrant, about 1 minute. Stir in Pace® Medium Picante Sauce until well combined. 

  • Step 2

    Transfer mixture into a blender along with Pace® Classic Taco Signature Sauce, if using, and season with salt; wipe skillet clean. Secure lid on blender, and remove center piece to allow steam to escape. Place a clean towel over opening. Process until smooth, about 30 seconds; set aside.

  • Step 3

    Heat remaining 1 tablespoon oil in cleaned skillet over medium-high. Add shrimp, and cook, undisturbed, until lightly browned on underside, about 2 minutes. Stir in reserved Pace® Medium Picante Sauce mixture, bring to a simmer over medium-high, and cook, stirring often, until shrimp is opaque and cooked through, about 2 minutes. Serve with white rice and lime wedges, and garnish with cilantro.
