Easy Beef Enchiladas

Want to spend all day making enchiladas from scratch?  Then this Easy Beef Enchiladas recipe isn't for you.  Want enchiladas that taste like you spent all day cooking but you really only spent 40 minutes?  Then this is your recipe!  The secret is the enchilada sauce.  It's perfectly thick, rich and spicy.  Add some to sauteed beef and onion, wrap up the mixture in flour tortillas, then pour the rest over top.  Sprinkle with cheese and bake.  You only need 5 ingredients!  This Easy Beef Enchiladas recipe is comfort food you can serve anytime- so enjoy!


  • 1 pound 85% lean ground beef
  • 1 large onion, diced (about 1 cup)
  • 2 cans (10.5 ounces each) Pace® Mild Enchilada Sauce
  • 1 cup shredded mild Cheddar cheese
  • 8 corn tortilla or flour tortillas (6-inch), warmed


  • Step 1

    Heat the oven to 375°F.  Spray a 13x8x2-inch baking dish with cooking spray.

  • Step 2

    While the oven is heating, cook the beef and onion in a 12-inch skillet over medium-high heat until the beef is well browned and the onion is tender, stirring often to separate meat.  Pour off any fat.

  • Step 3

    Stir 1 can enchilada sauce and 1/2 cup cheese in the skillet.  Spread about 1/3 cup beef mixture down the center of each tortilla.  Roll up the tortillas around the filling and place, seam-side down, into the baking dish.  Pour the remaining 1 can enchilada sauce over the filled tortillas.  Sprinkle with the remaining 1/2 cup cheese.

  • Step 4

    Bake for 20 minutes or until the enchiladas are hot.
