Ingredients

  • 1 pound 80% lean ground beef (80/20)
  • 1 1/2 tablespoons taco seasoning mix
  • 1 can (15 ounces) refried beans
  • 2/3 cup Pace® Picante Sauce, divided
  • 5 tablespoons Pace® Signature Sauces Hot Honey Chipotle Sauce, divided
  • 1 bag (13 ounces) tortilla chips
  • 8 ounces (1 bag) shredded Colby Jack cheese (about 2 cups)
  • 1/2 cup sour cream
  • 1/2 cup Pace® Salsa con Queso
  • 1 medium (6 ounces) avocado, peeled and cut into small cubes
  • 1 teaspoon chopped fresh cilantro

  • Tips

    • The beef and bean mixture can be prepared and refrigerated in an airtight container for up to 3 days before assembling, baking, and serving.
    • Combining the ground beef and the refried beans prevents the age-old irritation of your delicious toppings falling off the chip. The beans act like an adhesive, sticking all the yummy stuff to your chip!
    • Warm up your Pace® Salsa Con Queso by pouring some in a microwave-safe bowl and heating for 10 to 20 seconds.
  • Step 1

    Preheat oven to 400°F. Line a large rimmed baking sheet with foil.

  • Step 2

    Heat a large skillet over medium-high. Add beef and cook, stirring often to crumble, until browned, about 6 minutes. Drain in a colander over a large heat-proof bowl; discard drippings.

  • Step 3

    Return beef to skillet over medium; add taco seasoning and cook, stirring constantly, until fragrant and meat is coated, about 1 minute. Stir in beans, 1/3 cup of the Pace® Picante Sauce, and 4 tablespoons of the Pace® Hot Honey Chipotle Sauce; cook, stirring constantly, until warmed through and smooth, 1 to 2 minutes. Remove from heat.

    Arrange a layer of chips (about half) on prepared baking sheet. Dollop with half of the beef mixture (about 1 1/2 cups) and sprinkle evenly with half of the cheese (about 1 cup). Repeat with remaining chips, beef mixture, and cheese.

  • Step 5

    Bake in preheated oven until cheese melts and chips are crisp, 5 to 7 minutes.

  • Step 6

    While nachos bake, whisk together sour cream and remaining 1 tablespoon Pace® Hot Honey Chipotle Sauce until smooth to make the Pace® Hot Honey Chipotle crema.

  • Step 7

    Drizzle baked nachos with warmed Pace® Salsa Con Queso and Pace® Hot Honey Chipotle crema, and dollop with remaining 1/3 cup Pace® Picante Sauce. Sprinkle evenly with avocado; garnish with cilantro and lime wedges. Serve immediately.
