Easy Picante Meatballs

Why not meatball tacos? Or meatball quesadillas?  These Easy Picante Meatballs will have you rethinking your dinner favorites.  Ready in less than an hour, these homemade meatballs simmer in picante sauce (you can choose your heat level!) for amazing flavor.  Cheddar cheese melted into the sauce takes it over the top!  These Easy Picante Meatballs are great on their own as an appetizer, over pasta or rice, or used as a creative filling for tortillas.

Ingredients

  • 2 1/2 pounds ground beef or ground meat loaf mix (beef, pork, veal)
  • 6 tablespoons dry bread crumbs
  • 1/4 cup milk
  • 2 egg
  • 1 teaspoon garlic powder
  • 4 green onion, chopped (about 1/2 cup)
  • 1 cup shredded Cheddar cheese (about 4 ounces) (amount divided in recipe below)
  • 2 tablespoons olive oil or vegetable oil
  • 2 jars (16 ounces each ) Pace® Picante Sauce

Instructions

  • Step 1

    Season the beef with salt and pepper.  Thoroughly mix the beef, bread crumbs, milk, eggs, garlic powder, green onions and 2 tablespoons cheese in a large bowl. Shape the mixture firmly into 30 (1 1/2-inch) meatballs.

  • Step 2

    Heat the oil in a 12-inch nonstick skillet over medium-high heat. Add the meatballs and cook until well browned on all sides (for better browning, add and cook in two batches). Pour off any fat.

  • Step 3

    Add the picante sauce to the meatballs and heat to a boil. Reduce the heat to low. Cover and cook for 10 minutes or until the meatballs are done. Stir in the remaining about 3/4 cup cheese and cook for 1 minute or until the cheese is melted. Sprinkle with additional chopped green onions, if desired.
