Crushed tortilla chips bind the ground beef, and a homemade spice blend adds savoriness, but it's the Pace® Picante Sauce and Pace® Classic Signature Taco Sauce that really bring the smoky Tex-Mex heat.

Ingredients

  • 2 pounds 85% lean ground beef (85/15)
  • 1 small (4 ounces) yellow onion, finely chopped (about 3/4 cup)
  • 1 tablespoon chili powder
  • 1 tablespoon ground cumin
  • 2 teaspoons smoked paprika
  • 1 1/2 cups Mexican blend cheese, shredded (about 6 ounces), divided
  • 1 1/4 cups crushed tortilla chips (about 2 3/4 ounces), divided
  • 2 egg, beaten
  • 1/2 cup Pace® Picante Sauce
  • 2/3 cup Pace® Signature Sauces Classic Taco Sauce, divided
  • 1 teaspoon chopped fresh cilantro

Instructions

  • Tips

    • You can use 1 (1-ounce) packet of taco seasoning instead of the homemade spice blend.
    • Try serving this dish with rice! While mashed potatoes may be the traditional meatloaf side dish, rice really suits this flavor profile.
  • Step 1

    Preheat oven to 350°F. Mix together beef, onion, chili powder, cumin, smoked paprika, 1 cup of the cheese, and 1 cup of the crushed tortilla chips in a large bowl until thoroughly combined.

  • Step 2

    Whisk together eggs, Pace® Picante Sauce, and 1/3 cup of the Pace® Classic Taco Sauce in a medium bowl until smooth; fold into beef mixture until evenly combined.

  • Step 3

    Transfer beef mixture to a 9- x 13-inch baking dish (or a large rimmed baking sheet lined with aluminum foil) and form into a 9- x 4-inch loaf. Bake in preheated oven until browned all over and a thermometer inserted into the center registers 120°F, about 40 minutes.

  • Step 4

    Brush top with remaining 1/3 cup Pace® Classic Taco Sauce; sprinkle with remaining 1/2 cup cheese and 1/4 cup crushed chips. Return to oven and continue baking until a thermometer inserted into the center registers 165°F, about 15 minutes. Let rest at least 10 minutes before slicing and serving. Sprinkle with cilantro.
