What looks like a meatloaf but tasted like a deconstructed taco? Your new favorite easy weeknight dish! Crushed tortilla chips bind the ground beef, and a homemade spice blend adds savoriness, but it's the Pace® Picante Sauce and Pace® Classic Signature Taco Sauce that really bring the smoky Tex-Mex heat.
Step 1
Preheat oven to 350°F. Mix together beef, onion, chili powder, cumin, smoked paprika, 1 cup of the cheese, and 1 cup of the crushed tortilla chips in a large bowl until thoroughly combined.
Step 2
Whisk together eggs, Pace® Picante Sauce, and 1/3 cup of the Pace® Classic Taco Sauce in a medium bowl until smooth; fold into beef mixture until evenly combined.
Step 3
Transfer beef mixture to a 9- x 13-inch baking dish (or a large rimmed baking sheet lined with aluminum foil) and form into a 9- x 4-inch loaf. Bake in preheated oven until browned all over and a thermometer inserted into the center registers 120°F, about 40 minutes.
Step 4
Brush top with remaining 1/3 cup Pace® Classic Taco Sauce; sprinkle with remaining 1/2 cup cheese and 1/4 cup crushed chips. Return to oven and continue baking until a thermometer inserted into the center registers 165°F, about 15 minutes. Let rest at least 10 minutes before slicing and serving. Sprinkle with cilantro.
