With its bold mix of textures and flavors, no two bites of this taco-inspired salad are quite the same—but they’re all delicious. The saucy, spicy ground beef is perfectly seasoned after simmering in Pace® Chunky Salsa, while a mix of Pace® Hot Honey Chipotle Signature Sauce, olive oil, and lime juice adds up to a tangy, smoky dressing that brings out the best in this dish’s fresh veggies.

Ingredients

  • 1 pound 85% lean ground beef
  • 1 can black beans, drained and rinsed
  • 1 1/4 cups Pace® Chunky Salsa or Medium Picante Sauce
  • 1/2 cup water
  • 1/2 cup Pace® Signature Sauces Hot Honey Chipotle Sauce
  • 6 tablespoons olive oil
  • 3 tablespoons fresh lime juice (from 2 limes)
  • 12 cups chopped romaine lettuce (about 4 medium hearts of romaine)
  • 1 1/2 cups fresh corn kernels (from 2 ears)
  • 1 1/2 cups yellow corn tortilla strips
  • 2 medium avocado, chopped or sliced
  • 1 cup cotija cheese, crumbled

    • Can’t find tortilla strips? Top your salad with crushed tortilla chips.
    • You can make the dressing up to 5 days in advance, and dress your salad when it’s ready to serve.
  • Step 1

    Heat a large skillet over medium-high. Add ground beef and cook, stirring often to crumble, until browned, about 6 minutes. Drain any excess grease and return to skillet. Stir in black beans, Pace® Medium Chunky Salsa, water, and 1/2 teaspoon salt; bring to a simmer over medium-high and cook, stirring occasionally, until sauce thickens and coats beef well, about 5 minutes. Set aside to cool slightly, about 10 minutes.

  • Step 2

    Meanwhile, in a large bowl, whisk together Pace® Hot Honey Chipotle Signature Sauce, olive oil, and lime juice until emulsified. Season with salt. Add lettuce; toss until well combined and divide among 6 serving bowls.

  • Step 3

    Top with beef mixture, corn, tortilla strips, avocados and cotija cheese.
