Step 1
Stir the picante sauce, cranberry sauce, brown sugar, mustard and nutmeg in a 6-quart saucepot. Heat to a boil over medium-high heat and cook for 10 minutes. Add the pork to the saucepot and heat to a boil. Reduce the heat to low. Cover and cook for 2 hours or until the pork is fork-tender.
Step 2
Remove the pork from the sauce and cool slightly. Shred the pork, using two forks. Return the pork to the sauce and heat through. Serve about 1/2 cup shredded pork in each roll. Top with shredded lettuce and coleslaw, if desired.

I saw this recipe on the news and really wanted to try Picante and Cranberry in a recipe. I changed it a little. I wanted chunky pork over rice so I cut the recipe in half and left out the rolls, lettuce, and coleslaw. LOVED IT!!! Easy to make and since I am only cooking for two, it worked with left overs. This recipe is versatile, I can see myself trying it with chicken or as a spicy topping for fish next.
Easy and great for every season.
This came out great. I threw all the ingredients in my crockpot for 8 - 12 hours, shredded the pork and put them back in for a little while longer. My boyfriend and his roomates LOVED it.
My family really loved it. It is so tasty and I should have made more.
