Stir the ricotta cheese, 1/2 cup Parmesan cheese and eggs in a medium bowl and set it aside. Season the beef as desired. In a 3-quart saucepan over medium-high heat, cook the beef until it's well browned, stirring often to break up the meat. Pour off any fat. Stir the sauce in the saucepan.
Spoon 2 cups beef mixture into a 13x9x2-inch baking dish. Top with 4 lasagna noodles, half the ricotta cheese mixture and half the mozzarella. Repeat the layers. Top with the remaining 4 lasagna noodles, remaining beef mixture and the remaining Parmesan cheese.
Bake at 400°F. for 30 minutes or until the lasagna is hot. Let stand for 10 minutes before cutting.
If you want a genuine Italian lasagna recipe, this isn't it. I love authentic Italian, but I don't like to go to the store for 20 ingredients just for one dish. I have been looking for an easy recipe for a while now. This was perfect and my husband and daughter loved it! It takes no time and it tastes great. It's also very good leftover, if not better! I've already passed this one onto my mom and I can't wait to make it again.

I have made everything from the basic recipe to adding slices of heirloom tomatoes, baby spinach and portobello mushrooms between the layers and it is so good!! Many of my friends who only like the plain recipe love that this can have such variety and still be delicious!!
