Breakfast Tacos are an easy, satisfying way to start the day. Fluffy scrambled eggs are layered into warm flour tortillas with savory sausage and cheese, then finished with Pace® Picante Sauce spooned over the top for a bold, zesty kick. Simple to prepare and full of classic breakfast flavors, these tacos come together quickly and are delicious.
Time-Saving Tip: To save prep time, you can use fully-cooked sausage "crumbles" instead of cooking and draining the sausage. Stir about 1 cup sausage crumbles into the eggs in Step 2.
Step 1
Cook and crumble sausage in a 12-inch nonstick skillet over medium-high heat. Remove and drain.
Step 2
Heat the butter over medium heat. Stir in the eggs and and cook until the eggs are set, stirring often. Season with salt and pepper. When the eggs are almost set, add the sausage and cheese to the skillet and mix with eggs and stir until done.
Step 3
Spoon about 1/2 cup egg mixture down the center of each tortilla and top with 2 tablespoons of picante sauce. Fold the tortillas around the filling and sprinkle with green onion.
