Ingredients

  • 1 pound 85% lean ground beef
  • 1 (5 ounces) red onion, finely chopped (about 1 tablespoon)
  • 3 medium garlic cloves, finely chopped (about 1 tablespoon)
  • 2 teaspoons chili powder
  • 1 teaspoon kosher salt
  • 1 teaspoon smoked paprika
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 cup Pace® Picante Sauce
  • 1/2 cup Pace® Signature Sauces Hot Honey Chipotle Sauce
  • 1 package (8 ounces) cream cheese
  • 8 ounces pepper Jack cheese, shredded (about 2 cups), divided

  • Tips

    • Cheesy dips are best eaten right away to fully experience all that gooey, melty goodness.
    • Don’t worry too much about how the more acidic ingredients will interact with cast iron; if your skillet is well-seasoned it will be fine.
  • Step 1

    Preheat oven to broil with a rack 6 inches from heat source, and heat a 10-inch cast iron skillet over medium-high. Add beef, and cook, undisturbed, until well browned on underside, about 3 minutes. Stir in onion, and continue to cook, stirring occasionally, until beef is cooked through, about 3 minutes.

  • Step 2

    Add garlic, chili powder, salt, and smoked paprika; cook over medium, stirring often, until fragrant, about 1 minute. Stir in black beans, Picante Sauce, and Hot Honey Chipotle Sauce. Reduce heat to low, add cream cheese and 3/4 cup of the Pepper Jack cheese, and cook, stirring constantly, until melted and smooth, about 2 minutes. Remove from heat and spread into an even layer.

  • Step 3

    Sprinkle beef mixture evenly with remaining 1 1/4 cups Pepper Jack cheese. Transfer to preheated oven, and broil until cheese is melted and dip is bubbly around the edges, 3 to 4 minutes. Garnish with red onion, avocado, tomatoes, and cilantro. Serve with tortilla chips.
